A few thoughts - First, book an aisle seat so you can get up and down frequently. Further - don't drink beforehand for several hours; when on the plane, try to "go" well before you think you need to - I find this helps with me; also, leave your bowl movement until you will be on the plane - I find this can often relax the muscles associated with urinating and it allows me to go.
Lastly, although I no longer carry it, having a catheter in your carry on luggage allows you to have it in case there is a real issue. Having it with me definitely reduced my anxiety, and if I ever have a really long flight I will get one again. In the end I did not need it.
